Cheese Vegetable Soup

2 ½ cups potatoes, diced
½ cup onion, diced
1 cup celery, diced
4 pkgs. Herb Ox Chicken Broth mix
2 ½ cups water
1 pkg. frozen California Mixed Vegetables
2 cans Cream of Chicken soup
1 lb. Velveeta

Bring broth and water to a boil. Add potatoes, celery, and onion and simmer for 20 minutes. Add California Mixed vegetables and simmer for 10 minutes. In separate pan, combine Cream of Chicken soup and cheese and heat until melted. Pour cheese mixture into vegetable mixture and heat thoroughly. Freezes well. (Nancy W's recipe.)
