Mama Mashburn's Meatloaf

Loaf Ingredients
1 pkg. meat loaf mix*
2 slices bread moistened in a little water
1 large onion, chopped
½ - ¾ cup catsup
2-3 Tbsp. milk
1 egg
2 Tbsp. Worcestershire sauce
salt & pepper to taste


Topping
Small Can Tomato Sauce (add 2-3 Tbsp water)
3-4 slices bacon

Mix loaf ingredients well with hands and shape into 2 football-shaped loaves (Don't pack too tightly-should be moist.) Put both loaves in an iron skillet and pour a small can tomato sauce with 2-3 Tbsp. water added to it over loaves. Cut about three slices of bacon in half and place diagonally on top of loaves. Bake uncovered 1 hour @ 400°. (Can't beat this recipe!)


* Years ago you could buy a preportioned mix of meats for meatloaf that contained 1/2 lb ground beef, 1/2 lb ground pork, and 1/2 lb ground veal. Since you usually can't find that, you can make your own mix. We usually use 1 lb ground beef and 1/2 lb ground pork.
